EGGS: It’s What’s For Dinner (And Lunch)
We’ve had the 6 baby chicks and 1 rooster for 2 weeks.

The earliest they’ll be laying eggs is October, good Lord willing and the hawks don’t fly overhead. A friend brought us 4 laying hens last Sunday. Two are Rhode Island Reds (Bertha and Weisa) and 2 are Banties (Bobbi and Dayle). All named for Lance’s grandmothers (the grandma’s given names plus their nicknames).
In the week we’ve had the 4 hens, we’ve collected 18 eggs!! One dropped and 3 shared with a favorite neighbor. The rest are being used up fast, with great pleasure! Lance made us egg sammiches (best ever, I might add). I made a Quiche and a Frittata this weekend. Both, outstanding (if I do say so myself). Are the dishes so good because they came from happy chickens? I do believe so. I’m anxious to see how many different delicious dishes we can create from our incredible, edible (free range) EGGS!
